Behind the scenes on our quarterly winter shoot for Hilton Surfers Paradise: one day, video and photo, across the residences, Catch, Ms Margot's high tea and the eforea Spa.

Every quarter we head up to the Gold Coast and spend a day capturing Hilton Surfers Paradise Hotel & Residences. It is a video and photography shoot rolled into one, and it feeds a full season of content across social, web, and campaign.
This was the winter round, so the brief was warm food, blue over Surfers, and the slow, cosy moments that make a winter escape look worth booking. Here is a look from behind the camera. No sound, just the day as it happened.
One hotel, a dozen worlds in a day
A Hilton shoot day is really a dozen shoots stacked back to back. We start at crew call around 8:30, then move through the building room by room: a family breakfast and board games in the residences, a couple with morning coffee up in a Panorama suite, down to Catch for the winter menu, over to Ms Margot for high tea, into the Promenade and Ballroom for conference and events, and finally the eforea Spa. Resort casual, a blue thread running through the wardrobe, real natural light doing most of the work.
The schedule is tight to the fifteen minutes, because natural light, food that has to look fresh, and a working hotel full of real guests do not wait around. Planning the run of the day is half the job.

Winter on a plate
Food and beverage is the heart of a hospitality shoot, and winter gives you the good stuff. Catch built the menu around its cold-weather heroes, the Coconut King Prawn and the Seafood Platter, plus a new coffee-led breakfast with matcha and granola. Ms Margot brought out the Winter High Tea, a new breakfast board, and its signature pours.
We shoot food fast and close, with hands reaching in, steam still rising, a wine glass just on the edge of frame. The trick is capturing it in the ninety seconds after it leaves the kitchen, before it stops looking like the best version of itself.
The people make it
The other half of a good hospitality campaign is the people who run the place. Across the day we sat down with the team: the spa therapist on what a hot stone massage actually does for a guest who walks in cold and tense, Kathy the chef on why the winter menu changes, Sofia on the events that come alive in the Ballroom, and Lisa on the energy of Ms Margot on a winter evening.
We ask everyone to answer in full sentences and restate the question, so the grabs cut clean later. It is a small thing on the day that saves hours in the edit.

Why we shoot it every quarter
Hilton Surfers Paradise is on an ongoing retainer with us, which means a shoot like this every quarter. Seasons are the whole point. A winter library will not carry a summer campaign, and a property this size is always launching a new menu, a refreshed suite, or a seasonal offer that needs its own imagery.
By the time the day wraps we have banked hundreds of photos and a stack of video, enough to keep the channels fed and the site fresh right through the season. Then we come back and do it again for the next one. That is what a content retainer looks like when the brand is a hotel.
